I own a dehydrator and dry a lot of herbs and other things like tomatoes and bell peppers. It is cheaper in the long run to use a dryer as it uses almost no power and you do not record the oven in the meantime.
This makes be a sweet paprika called Edelsüss or Sweet Paprika. If you want a little more “bite” in, you can add 1-2 chillies for pungency, this is called a Rose paprika (it “stings like a rose” I guess).
You can use all colours bell peppers. Red ones gives a redder paprika. Greens makes the paprika darker and most yellow makes the paprika lighter in colour. It doesn’t affect the the taste much, the paprika powder becomes sweetest with the most reds and a deeper but still sweet taste with the greens.
