Our goal is to have 3-4 meat free days per week. This dish takes only 45 mins from preparation to serving. It’s very cheap and fills every hungry stomach. Chickpeas are full of protein and a perfect substitute for meat, as they give that good feeling of being sated for a long time.

Ingredients:
2 tbsp. ghee or coconut oil
2-3 red onions
3 cloves garlic
3 carrots
1 tbsp. turmeric powder
1 tbsp. cumin powder
1 tbsp. cilantro powder
2 cans chickpeas
1 can coconut milk
1 can chopped tomatoes
1 cube vegetable broth
Juice of one lime
3 stalks fresh cilantro (or parsley)

Method:
Mix all spices in a bowl
Peel and dice the onions
Peel and chop the garlic
Peel and dice the carrots
Wash cilantro or parsley and chop it
Heat the ghee or coconut oil in the pot
Add onions and garlic and sweat until they are clear
All the spices and sweat shortly
Add chickpeas, carrots, coconut milk tomatoes and the cube of broth
